KYOTO
The knives from the Tamahagane Kyoto series, forged in Tsubame City, are made from two types of steel - a VG-5 core and 62 layers of stainless steel SUS410. The entire blade has a hardness of approximately 61 HRC on the Rockwell scale, classifying them among knives suitable even for professionals. The steel is additionally cold-forged, resulting in increased steel density, wear resistance, and hardness.
The KYOTO series knives are extremely sharp and provide optimal cutting properties as well as ease of sharpening. It can take up to 10-12 weeks between sharpenings.
These knives were discovered during the "BOCUSE d'Or 2009" competition for the world's best chefs, where one of the chefs worked with these picturesque knives featuring a subtle damask pattern on the blade, which caught the attention of the audience.
The VG-5 steel ensures excellent cutting properties and ease of sharpening. The black handle is made of micarta, known for its high durability and resistance to moisture. This series is perfect for both household and professional use.
