The long Japanese knife with a serrated blade is designed to cut all types of bread without pressing it excessively into the cutting board. The thin and sharp edge works exceptionally well with hard, crispy crusts (e.g., baguettes), allowing you to obtain thin slices while preserving the shape of the bread.

Global NI Collection
The Global NI series is an innovative approach to classic knives. The oriental handle is well-balanced and streamlined, providing a completely new experience during use. The handle's sand filling helps relieve the wrist during knife work.
Global Knives
Global knives are lightweight and perfectly balanced, reducing fatigue during extended kitchen work. The 'dotted' handle ensures a secure grip and prevents the knife from slipping, while also allowing the knife to fit well with the shape and size of the hand. Thanks to their seamless construction, Global knives are highly hygienic and easy to clean.
History
In 1985, Komin Yamada designed GLOBAL knives, which conquered the world and became classics for professional chefs and gastronomes. Global knives are the first kitchen knives in history to integrate the blade with the handle.
The knife blades are made from three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HR. The production process begins with heating the steel to 1070 degrees Celsius, followed by cooling to -80 degrees Celsius. The hardening process makes the steel exceptionally strong and sharp. Knife sharpening is continuously monitored and controlled by masters. Global knives have won numerous international awards and have been highly regarded by top chefs for many years.
