History
In 1985, Komin Yamada designed GLOBAL knives, which gained worldwide acclaim and became classics among professional chefs and gastronomes. Global knives were the first kitchen knives in history to integrate the blade with the handle.
The knife blades are made from three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HR. The production process begins by heating the steel to 1070 degrees Celsius and then cooling it to -80 degrees Celsius. The hardening process results in exceptionally strong and sharp blades. The knife sharpening process is continuously monitored and controlled by skilled craftsmen. Global knives have won numerous international awards and have been highly regarded by top chefs for many years.
