KYOTO
Knives from the Tamahagane Kyoto series, forged in the city of Tsubame City, are made from two types of steel - a VG-5 steel core and 62 layers of stainless steel SUS410. The overall hardness is approximately 61 HRC on the Rockwell scale, classifying them as knives suitable for even professionals. The steel is additionally cold-forged, resulting in increased steel density, wear resistance, and hardness.
KYOTO series knives are extremely sharp and provide optimal cutting properties, as well as ease of sharpening. It can take up to 10-12 weeks between one sharpening and the next.
These knives were discovered during the "BOCUSE d'Or 2009" competition for the world's best chefs, where one of the chefs worked with these picturesque knives featuring a subtle damascus pattern on the blade, which caught the attention of the audience.
VG-5 steel provides excellent cutting properties and ease of sharpening. The black handle is made of micarta, known for its exceptional durability and resistance to moisture. The series is perfect for both domestic and professional use.
