The sujihiki knife from the Japanese brand Tamahagane is an excellent variation of a sashimi knife. The Tamahagane Kyoto series knives, forged in Tsubame City, are made from two types of steel - the core is made from VG-5 steel, and there are 63 layers of SUS410 stainless steel. The overall hardness is approximately 61 HRC on the Rockwell scale, classifying them as knives suitable even for professionals. The steel is additionally cold-forged, which results in increased steel density, wear resistance, and hardness.
KYOTO knives are extremely sharp and offer optimal cutting properties as well as ease of sharpening. It can take up to 10-12 weeks between one sharpening and the next.
These knives were discovered during the "BOCUSE d'Or 2009" competition for the world's best chefs when one of the chefs worked with these picturesque knives featuring a subtle Damascus pattern on the blade, catching the attention of the audience.
