KYOTO
Forged in Tsubame City, the knives in the Tamahagane Kyoto series are made from two types of steel: the core is forged from VG-5 steel, and there are 62 layers of stainless steel SUS410. The overall hardness is approximately 61 HRC +/- 1 on the Rockwell scale, classifying them among knives suitable even for professionals. The steel is additionally cold-forged, resulting in increased steel density, wear resistance, and hardness.
The KYOTO series knives are exceptionally sharp and provide optimal cutting properties, making them easy to sharpen. It can take up to 10-12 weeks between one sharpening and the next.
These knives were discovered during the "BOCUSE d'Or 2009" competition for the world's best chefs, where one of the chefs worked with these picturesque knives featuring a subtle damascus pattern on the blade, catching the attention of the audience.
VG-5 steel ensures excellent cutting properties and ease of sharpening. The black handle is made from micarta, known for its high durability and resistance to moisture. This series is ideal for both home and professional use.
Tamahagane
An exceptional brand founded in the Nigatta prefecture in 1958, Tamahagane's products have become some of the most well-known items produced in Tsubame City, Japan, over the years. The name Tamahagane means noble steel, produced using traditional methods. Despite its Japanese traditionalism, Mr. Atsushi Kataoka's factory is equipped with modern machines to produce the best final product.
