History
In 1985, Komin Yamada designed GLOBAL knives, which conquered the world and became classics for professional chefs and gastronomes. Global knives are the first kitchen knives in history in which the blade is integrated with the handle.
The knife blades are made of three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HR. The production process begins with heating the steel to 1070 degrees Celsius and then cooling it to -80 degrees Celsius. The hardening process makes the steel exceptionally strong and sharp. The knife sharpening itself is constantly monitored and controlled by masters. Global knives have won many international awards and have been highly regarded by top chefs for many years.
