History
In 1985, Komin Yamada designed Global knives, which took the world by storm and became classics for professional chefs and gastronomes. Global knives are the first kitchen knives in history to integrate the blade with the handle. The knife blades are crafted from three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HR. The production process starts with heating the steel to 1070 degrees Celsius, followed by cooling to -80 degrees Celsius. The hardening process results in exceptionally strong and sharp steel. The knife sharpening itself is continuously monitored and controlled by skilled craftsmen.
Global knives have received numerous international awards and have been highly esteemed among top chefs for many years.
