A relatively heavy knife, commonly known as a Chinese cleaver, widely used in Asia as a versatile kitchen chef's knife. It features a thin, rectangular blade and is used for chopping and slicing vegetables, fruits, and boneless meat. Due to its exceptionally wide blade, it allows you to quickly gather the chopped ingredients and transfer them to a salad bowl or pan.
The Chinese cleaver with its thin blade, unlike the heavy cleaver used in the West, is not intended for chopping bones.

History
In 1985, Komin Yamada designed Global knives, which conquered the world and became classics for professional chefs and gastronomes. Global knives are the first kitchen knives in history to integrate the blade with the handle. The knife blades are made of three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HR. The production process begins with heating the steel to 1070 degrees Celsius, followed by cooling to -80 degrees Celsius. The hardening process makes the steel exceptionally strong and sharp. The knife sharpening itself is constantly monitored and controlled by masters.
Global knives have won numerous international awards and have been highly regarded among top chefs for many years.
