Fondue is a dish prepared with hot cheese and white wine. The dish originates from Swiss cuisine but is also very popular in France and Italy.
It is typically enjoyed in a larger gathering, directly from the pot (called a "caquelon"), by dipping bread or vegetables into the melted cheese mixture using forks. Depending on the region, there are various recipes for spices and additions. The basic ingredients always include at least two types of cheese, often emmental, gruyère, appenzeller, white dry wine, and a dash of kirsch. Adding a small amount of potato starch helps emulsify the cheese and wine mixture and prevents it from separating. Typical spices for fondue include white pepper, nutmeg, and garlic.
There is also meat fondue (fondue bourguignonne), where the cheese mixture is replaced with hot oil, and the bread on the forks is replaced with beef. Chocolate fondue is also popular.
