Beyond Aogami Super
The Beyond series of Japanese knives are forged from Aogami Super steel (also known as Blue Steel) by Mcusta Zanmai. They are known for their excellent edge retention and cutting performance. Despite being 3-layered, these knives are incredibly sharp and exquisitely beautiful. The use of a Super Aogami carbon steel core ensures that the cutting edge effortlessly glides through ingredients that offer little resistance, and the stainless steel cladding protects the surface from rust. With proper care, they can maintain their sharpness for up to 4-5 months. The octagonal handle made from hinoki wood (Japanese cypress) provides excellent control over the cutting edge and is contoured for additional comfort and a perfect fit for your hand.
Hinoki is a type of cypress wood found only in Japan. It is very lightweight, exceptionally resilient, and consequently highly durable. It is also highly resistant to water, making it easy to clean.
Mcusta Zanmai
MCUSTA is a Japanese company founded in 1964, specializing in the production of high-quality kitchen knives. Their expansion has reached worldwide acclaim, allowing users to enjoy professional-grade blades in both home and professional settings.
The synonym for the word ZANMAI is luxury, which holds significant importance in the production of each knife.
In the initial stages, the knives are laser-cut from sheets of steel, resulting in high hardness. They are then cold-forged, increasing the steel's density, wear resistance, and the aforementioned hardness.
Crucial to the quality of Mcusta knives is their hand assembly, which underscores their quality and uniqueness.
