G-18 24cm Filleting Knife A practical knife with a tapered, flexible blade designed for filleting fish and other kitchen tasks that require precision and full control over the knife. It can be used for cutting fillets, removing fish skin, loosening poultry, and slicing large portions of meat. The long blade allows you to obtain even very large fillets and eliminates the problem of product loss. Blade length: 24cm Total length: 37cm Blade width: 3.2cm Weight: approx. 166g Global Knives Global knives are lightweight and perfectly balanced, reducing fatigue during long hours of work in the kitchen. The 'dimpled' handle ensures a secure grip and prevents the knife from slipping, making it fit comfortably in the shape and size of your hand. Thanks to their seamless construction, Global knives are incredibly hygienic and easy to clean. History In 1985, Komin Yamada designed Global knives, which conquered the world and became classics for professional chefs and gourmets. Global knives are the first kitchen knives in history to integrate the blade with the handle. The knife blades are made of three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HR. The production process begins with heating the steel to 1070 degrees Celsius and then cooling it to -80 degrees Celsius. The hardening process makes the steel exceptionally strong and sharp. The knife sharpening itself is constantly monitored and controlled by masters. Global knives have won many international awards and have been highly regarded by top chefs for many years.
