Global Knives
Global knives are lightweight and perfectly balanced, reducing fatigue during long hours of work in the kitchen. History
In 1985, Komin Yamada designed Global knives, which took the world by storm and became classics for professional chefs and gastronomes. Global knives are the first kitchen knives in history in which the blade is integrated with the handle.
The knife blades are made of three layers of CROMOVA 18 stainless steel (18% chromium) with a hardness of 56-58 HRC. The production process begins with heating the steel to 1070 degrees Celsius and then cooling it to -80 degrees Celsius. The hardening process makes the steel exceptionally strong and sharp. Knife sharpening itself is constantly monitored and controlled by master craftsmen. Global knives have won numerous international awards and have been highly regarded by top chefs for many years.
